New small bar opens in Kings Cross

Jeremy Shipley and Dan Knight have unveiled their new small bar, Hinky Dinks, a fun and retro-inspired venue offering tasty cocktails, a smart wine list and a great bar food.

“We wanted to do something that’s not like everything else out there, somewhere we would like to go to enjoy a cocktail, a glass of wine or some good food,” Knight says.

He explains that although the bar doesn’t carry a specific theme to it, it has taken inspiration from the 1950s, with the décor design aiming to make the bar “fun, enjoyable and not too serious”.

“The 50s period was an era were there was more disposable income for people to spend on going out and pursuing enjoyment. It was a golden age for bars, so we went with a little 50s feel but also made sure it wasn’t a museum,” Knight says

“It’s a little bit different, it has a bit of a house theme, there is a touch of kitchen and living room style so it’s like we are entertaining at home.”

The bar is located on 185 Darlinghurst Road and looks out onto Kings Cross, with its name inspired by Michael ‘Hinky Dink’ Kenna, a famously corrupt Chicago politician who owned a bar and gave away drinks to the homeless in exchange for votes.

It is currently open from 5pm, Wednesday through to Sunday, offering patrons a selection of 19 wines and 16 cocktails as well as bar food designed by Chef Laif Etournaud, of ONDE restaurant fame.

“The cocktails are all fun drinks, many containing syrups and jams, we also have some heavier stuff, some shared cocktails and a few barrel aged cocktails too,” Shipley says.
