Waterson will also be part of that discussion, along with Lawrence Dowd of Colonial Leisure Group and James Sinclair of Signature Hospitality Group.

This weekend also sees the Great Australian Beer SpecTAPular taking place in Melbourne and understanding about craft beer and many of the key beverage trends is key to every publican. He will be joined in that discussion by Matt Skinner of Sand Hill Road, Liam Matthews of Carringbush Hotel and Carl Pavett from Hunter Technologies.
