McHenry Distillery, in Port Arthur Tasmania, is a craft distillery that prides itself on using traditional handmade distillation methods. This year at Top Shelf, founder William McHenry will be sharing his distilling secrets with participants at the Top Shelf Festival in Melbourne on 8-9 August.

The distillery currently produces a range of gins, including the Classic Dry Gin that recently won gold in the 2014 Sip Awards. At Top Shelf participants are able to book a distilling session where they can create a gin to their own recipe under the instruction of Master Distiller William McHenry, using their own laboratory still. Gin fans can even bring their own botanicals to use in the recipe – within reason and botanical use is at the discretion of the distiller.

With six sessions on Saturday and five sessions on Sunday, each ticket ($120) allows 1-2 participants to create their own gin recipe then distil it, creating two 200ml bottles of gin (50% ABV). Each session runs for approximately 45 minutes.
