Tamburlaine organic wines credits the popularity of its sparkling Blanc de Blanc to the use of the traditional crown seal as a closure to lock in its fruit flavours and fine bubbles. The crown seal means less preservatives are used and no taint smells are formed which can be a big problem with corked sparkling wines.

"What most people don’t realise is that the crown seal or bottle cap is used as a closure in all classic bottle fermented wines for the bottle fermentation process and storage for years after that, before it is replaced with a cork. This includes all famous champagnes irrespective of shelf cost of the final wine," says Tamburlaine’s chief winemaker and CEO, Mark Davidson.

"By not using a cork we avoid any possibility of ‘cork taint’ which can spoil the wine and give it a mouldy odour. Instead, our crown seal helps create a wine that only has the clean and attractive beauty of early-picked Chardonnay, fruit full of petillance (small bubbles) every time you open a bottle."

Blanc de Blanc, which translates to white wine from white grapes, only uses certified organic chardonnay grapes which are ‘hand-picked’ early to retain natural acidity. The grapes are lightly pressed and fermented to make a white wine base. Then the wine is left in contact with the yeast ‘lees’ to increase the layering of flavours and finally it undergoes a secondary fermentation which produces natural smaller, longer-lasting CO2 bubbles. It is best enjoyed with oysters, seafood and gently flavoured white fish or is perfect chilled as an aperitif.
